billowing clouds of Hallertau

A pale hoppy beer of simple composure. Mashed with a lean base of barley and a bit of wheat. Hopped solely with Hallertau Mittelfrüh in the kettle and post fermentation. An assertive dry-hop lends some intriguing notes of thyme, kumamoto oyster/seabreeze, honeydew, etc. A real breezy drinker!

young lager

Unfiltered lager. A pursuit of delicate malt tone that intersects helles and Franconian kellerbier. A simple backbone of Pils and Munich malt, a relatively expressive yeast, and Tettnanger hops lend some doughy bread, chamomile and lemon rind notes. Carbed a little lower for a gentle drink.

ilk

Ordinary pale beer. A beer of English nature, ilk is a tangent of the hop forward, perplexingly malty, yet yeast driven ales of Yorkshire. Just Golden Promise, just East Kent Goldings, and a quirky yeast known for bouncing off the walls of square shaped vessels. This abridged combination of ingredients renders a beer with tones of orange marmalade and apricot jam on white toast. Drinkable and thinkable.

burden light

Hoppy wheat beer. Most akin to hopfenweisse. Brewed with lots of wheat, a bit of barley, and hopped with Czech grown Saaz both hot and cold side. Fermented with hefeweizen yeast on the cooler side to suppress isoamyl acetate, and let the hop character shine a little brighter. Some nice and subtle expressions of lemon curd, birthday cake, cream of wheat, and tarragon. Snappy and dry, yet creamy and lush.
